I haven't listened yet but will soon. Just wanted to say I remember roasting a goose decades ago and the amount of fat that came off was ASTOUNDING, didn't really know what to do at the time. I definitely would like to do this again, just for something different, plus goose fat is delicious and healthy.

I so want to put stuffing inside the bird and might do so along with another pan of dressing. It's my first time hosting, and while I am a good cook, and have roasted a turkey successfully before, it's still nerve-wracking.

I also watched Alison Roman's thanksgiving YouTube special and it was fabulous and charming and everything looked delicious. One of my favorite parts is her blue bowl that she put her mashed potatoes in. (I love dishes and pottery and all things domestic).

I like stuffing so much that its the only thing my friends and family mention to me about thanksgiving. "Did you get enough stuffing this year?" the answer is always no, and yes I need more. My weirdest thing is taking leftover stuffing and throwing on the griddle like hash with eggs and sausage. It's sacrilicous!
