How many times have I made pie crust badly? It can be puffy, slumpy, dry; it can melt off the rim of the pan; it can burn; it can taste like cardboard. I’ve tried my mother-in-law’s mother’s recipe, a “human hands shall not touch this crust"!” affair that made the kitchen look like a nuclear winter. I’ve food-processed crusts that seemed the solution to all my troubles, only to have them never work again. I’ve defaulted to graham cracker crusts (never a bad idea, btw), and have thrown out many, many crusts and started again and am always am looking for the one crust to rule them all.

Which I may have found! From our girl Alison Roman, and fittingly called “the only pie crust.” Yes, you can see from the above that it was executed badly. Never fear! It’s so yummy, flaky/crispy and salty/sweet, we could not stop eating these blueberry-raspberry hand-pies last night. Also, the first thing I ate this morning xx
